1 1/2 cups all-purpose flour

1 cup unsweetened cocoa powder, sifted

1 teaspoon baking soda

1/4 teaspoon salt

6 tablespoons butter, melted and cooled until lukewarm (not hot)

2 teaspoons vanilla extract

2 cups granulated sugar

2 tablespoons milk or water, divided use (not hot)

3 large eggs plus 1 egg white, room temperature (not hot)

Preparation: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In another bowl combine the butter and vanilla. Stir in the sugar and milk until smooth. Add the dry ingredients mixture to the wet ingredients slowly stirring constantly. Mix just until combined. Do not over-mix! Stir in 3 eggs and 1 whole egg white using a rubber spatula to stir until combined. Pour batter into prepared cake pans greased with butter or cooking spray. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted in the center comes out clean with no moist crumbs attached.
